Cardinal Kitchen’s Guide to Turning our Pantry Staples into Meals

We know it can sometimes be difficult to find recipes using the ingredients we provide that are both nourishing and actually taste delicious. We’ve picked ingredients found at Cardinal Kitchen as your starting point and provided recipes and suggestions for how to transform each into a quick and comforting meal. Feel free to swap out ingredients to make the recipe your own! Every recipe provided is highly flexible, so feel free to use whatever you have on hand! Use this guide as your starting point for recipes and customize them to your liking.

Pizza Melts: 

  • 1 Tbsp butter, room temperature
  • 1 Tbsp grated Parmesan
  • 1/2 tsp Italian seasoning
  • 2 slices hearty bread
  • 1/3 cup shredded mozzarella
  • 1 Tbsp pizza sauce
  • 6 slices pepperoni

Instructions:

  • Stir together the room temperature butter, grated parmesan, and Italian seasoning in a small bowl until evenly combined. Spread the Parmesan butter over one side of each slice of bread.
  • Flip the bread over so the un-buttered side is facing up. Place half of the shredded mozzarella on one slice of bread. Next, add small dollops of the sauce over top of the cheese, followed by the sliced pepperoni. Finally,
    add the remaining cheese. Place the second slice of bread on top to close the sandwich, butter side facing out.
  • Place the sandwich in a skillet and cook over medium-low heat until golden brown on each side and the cheese is melted on the inside. Cut the sandwich in half and serve!
  • Pro tip! For added flavor, include your favorite toppings and add them along with the pepperoni. We suggest olives, bell peppers, red onion or bacon bits, just use whatever you have on hand.

    Coconut Curry Ramen:

    • 1 cup canned mixed vegetables
    • 1.5 cups water
    • 1 3oz. package instant ramen
    • 1/2 cup full fat coconut milk
    • 1 tsp curry powder

    Instructions:

    • Add the canned vegetables and water to a small saucepot. Place a lid on the pot, turn the heat on to high, and bring the water up to a boil.
    • Once boiling, add the ramen noodles (without seasoning). Continue to boil for 2-3 minutes, or until the noodles are soft.
    • Shake the coconut can well to combine the solid fat and liquid before measuring. Add the coconut milk to the saucepot and stir to combine.
    • Finally, add the seasoning packet from the instant ramen and the curry powder. Stir to combine. Serve hot. 

    Peanut Butter Lunch Box:

    • ¾ cup peanut butter
    • 60 mini pretzels
    • 2 apples
    • Nuts or dried fruit of choice
    • 4 ribs celery
    • 1 tsp lemon juice (optional)

    Instructions:

    • Wash and slice the celery into sticks. Slice each apple in half, remove the core, then cut into slices. Sprinkle the lemon juice over the apple slices to slow browning, if desired.
    • Add 3 tablespoons of peanut butter to each container. Add about 15 pretzels to each container, along with ½ an apple, some celery sticks, and preferred nuts or dried fruit. Enjoy immediately or refrigerate up to five days.
