Mini food truck to stay through October

As students are returning to campus and getting back into their routines, so is a mobile lunch spot that offers students alternative dining options.  

The mini food truck that first showed up in March is back this semester and organizers are planning on it sticking around. 

As long as weather permits, chefs in the mini food truck plan to keep serving students through the month of October, closing for the winter and returning again in mid-spring. 

DJ Cleveland, dining communications and publicity coordinator, said the mini food truck offers new opportunities to meet campus community dining needs. 

“We are thrilled with the responses we’ve had on campus about our food truck,” Cleveland said in an email. “Students and faculty alike have been positive and thanked us for offering quick and healthy dining, gluten-free and vegan options, and fresh, modern meals.”

The mini food truck has maintained some of the same people that were visiting last semester, Cleveland said, but many of the customers are new.

Chef Stepfanie Miller created the menus for the mini food truck, which rotate each day of the week, and is planning to keep the healthy options that are currently in place. All of the meals are less than 550 calories and are served in plant-based to-go containers. 

The menu could change in the future, Cleveland said, but as for right now the healthier options are what people should expect when visiting the mini food truck. 

The truck opens at 11:30 a.m. Monday through Friday, though the location varies. All entrees are $5.
