Scotty's sets sights on expanding

Owner plans to obtain full liquor license after annexing Subway

Scotty's Brewhouse wants to offer customers mixed drinks with their meals, but a lack of space prevents its Village location from adding a full bar.

Owner Scott Wise said the restaurant is too cramped to house the inventory required for a full liquor license.

Taking over Subway, attached to the west side of the brewhouse, would be a way to increase the restaurant's storage space, Wise said, but Scotty's will be unable to do so for several more years.

Wise said he spoke with Network Property Services, the company that manages Subway's lease, about expanding into that location.

"We talked with [a Network representative] a little bit," Wise said, "[but] they like their spot. They like their location."

Subway Manager Dustin Lawson said the restaurant's lease would not expire for three years.

Scotty's Lafayette location began serving liquor in August, and Bloomington will begin serving liquor this summer, Wise said.

He said sales in Lafayette have increased 20 to 30 percent as a result of the expanded menu.

Wise said a full liquor license adds to the quality of the restaurant and more expensive drinks would reflect that quality.

"[Selling liquor] doesn't change the type of restaurant you are," Wise said. "There are no J+â-ñeger bombs."

Before it expands its business into Subway's location, Scotty's will double the seating capacity on its patio this spring by replacing the tables, Wise said.
